Ajwain or Carom seeds is an indigenous Indian spice, used in almost all of the daily and staple food curries prepared in the Indian households. Ajwain is small, Round- Oval sized shape and has yellowish to a green tint of color. Having a bitter and pungent taste, and even a small quantity of it dominating the flavor of the dish, they are rarely eaten raw and are commonly dry roasted or fried in ghee/butter this develops a more subtle and complex aroma and hence is primarily used to add flavor to lentil dishes.
